Eating enough nutrients might feel hard because take a look at how many there are:
Vitamines: VitE, D, K, A, B12, B6, C, Thiamin, Riboflavin, Niacin, Folate, Biotin,
Minerals: Magnesium, Calcium, Natrium, Chlorid, Potassium, Iron, Fluorid, Zinc, Manganese, Selenium, Copper, Chrome, Phosphors,
omega-3-fatty acids, fibre, linoleic acid, linolenic acid, CLAs
…
And what are you: a man, a woman, a child, pregnant, breast feeding, very old?
Nutrients are a very complex subject for a nutritions and we do this as a job. We are not just only interested in those numbers, we work with them.
I could tell you that broccoli contains a lot of Vit C, Bs, K and Folat but also potassium, calcium, magnesium and iron. If you want to increase the amount of iron your body absorbs, you add more VitC of a lemon for instance. But broccoli has no fat. So you must eat flaxseed oil to eat enough omega-3-fatty acids. Oh, sorry, you don’t like broccoli or flaxseed oil.
Let’s stop right here.
It’s great when a nutritionist or dietitian can tell you which vegetables contains which nutrients. But nutrients are way too complicated, we could talk days about them and we all have different preferences. Let me give you advices that actually help you:
Advice #1 that actually helps you:
Eat real food. Vegetables, meat, eggs, rice, legumes and so on.
Advice #2:
Eat a high amount of ingredients in one meal. I don’t mean to use food that has a long ingredient list. I mean to chose a lot of vegetables, herbs and spices frequently in one meal.
Advice #3:
Change the ingredients frequently if not daily.
Advice #4:
Eat legumes every other day.
This might feel overwhelming because a lot of our recipes don’t contain enough vegetables. Think of macaroni and cheese. You might feel like it is very difficult to eat enough nutrients.
