Lentil salad

I am creating balanced meals from scratch everyday. That’s what I teach in my online program „Wisdom of food providing“ so you can learn how to do the same.

Here is the recipe for this video.

2 cups of red lentils – cook the lentils until they are soft

1 onion, 2 carrots, 6 dates: cut them or grind them in small parts; roast them all together at the same time for 3 min

1/4 teaspoon salt, 1/2 teaspoon sugar, 2 tablespoon vinegar (Balsamico), 3 tablespoon oil (olive oil): mix all well together for a dressing

Let lentils and carrot mix cool of to protect the olive oil. Add the mix to the dressing

Serve with

1. crunchy veggies: bell pepper, white cabbage, cucumber, may turnip

2. soft veggies: avocado, tomato, pumpkin

3. fruit: mango, pineapple, pomegranate

As a fill-up side I recommend rice, bread or tortillas. This salad is a great tortilla filling.

It’s great for o-bento.
